Spicy Chickpea Crepes

1 cup chickpea flour
1 cup water
1 tsp salt or to taste
1 tsp chili powder
1 tsp garam masala (or your favorite curry powder)
2 tsp coriander powder
2 shallots, chopped
1 clove garlic, minced
1 inch stick ginger, minced
1 cup cottage cheese, drained (or 1 cup paneer, frozen for a while and then grated)- exclude this for vegan option
4 tsp canola/sunflower oil
